Apricot and Almond Muffin Ingredients
- 1 cup of almond powder
- 1 water glass flour
- 1 and a half teaspoons of baking powder
- Half a teaspoon of salt
- 1 glasses of yoghurt
- Half a glass of granulated sugar
- 2 large eggs
- 1/3 cup vegetable oil or melted butter
- 2 teaspoon vanilla
- 6 apricots (halved and pitted)
- Extra powdered sugar to sprinkle on top of the cakes.
How to Make Apricot and Almond Muffins?
- Grease the molds with butter.
- In a bowl, mix together the flour, almond powder, baking powder, and salt.
- In a separate mixing bowl, whisk together the yogurt, vegetable oil, vanilla extract, granulated sugar, and eggs until lightly combined.
- Add the dry mixture and whisk again until well combined.
- Divide the mixture evenly among your muffin tins.
- Place the apricots in the oven with the cut-off side facing upwards, submerging only half of them, sprinkle with extra sugar, and bake.
- Bake in a 180-degree oven until the edges are lightly browned, approximately 20-25 minutes.
